Ernest-Dai Fibla Takahashi, son of a Japanese mother, has always had a close relationship with his mother country. Since he was a child, he has spent long periods of time in the family home in Osaka, living with his grandmother, who introduced him to the culinary delights of that city, reputed as the gastronomic capital of Japan.
He studied tourism in Barcelona, but from a very young age he had ambitions of founding a Japanese restaurant in his hometown that would stand out above all for the creativity of its offerings. What for years was nothing more than a dream, began to seem achievable when he began a working relationship and later befriended chef Jun Fukuyama, whose desire for perfectionism and culinary inventiveness made him realize that he would be the key element in the kind of establishment he envisioned.
Hisako is the name of his grandmother, a tribute to his mentor in the Japanese culinary art who passed away a few years ago without seeing her grandson’s dream come true.
Hisako Umi
Two years after Ernest Fibla Takahashi’s dream came true with the opening in Barcelona of Hisako, the small Japanese restaurant named after his grandmother, that dream has now been extended to Castelldefels, the coastal town where Ernest has part of his roots.
This has been possible thanks to the success achieved by the izakaya on Londres Street, in Barcelona’s Eixample district, whose customers have made it a gastronomic reference point for the many lovers of Japanese cuisine.
The word Umi means sea in Japanese, and therefore the name Hisako Umi, located on Passeig de la Marina, next to the Mediterranean, evokes the framework where the dream of two years ago begins the development of a success that the owner, chef Jun Fukuyama and the entire Hisako staff hope will be as satisfactory as that of the founding restaurant in the heart of Barcelona.
